Almond Flour, Cream Cheese Pancakes

Almond Flour, Cream Cheese Pancakes

I’ve heard it time and time again when someone decides to give the keto life a go…”but do I have to give up pancakes?”  The answer is NO. Now, I am no baker but I have tried and tasted a few recipes and this is the one I keep going back to.

Light and fluffy low carb pancakes that are gluten free and so easy to make. These Almond Flour, Cream Cheese Pancakes are a healthy, sugar free and a perfect low carb breakfast choice.

We all love pancakes in this house, and these gluten free wonders are my new favorite low carb recipe.  Some keto recipes contain only eggs and cream cheese, which works well, but tastes a little on the eggy side and to be honest, I feel like they are so flimsy and break so much easier. Others add in coconut or almond flour or both – these two always work well together.

By using the almond flour, you make these pancakes more nutrient dense and they seriously keep you full and satiated until lunch.

Chocolate Peanut Butter Fat Bombs

Chocolate Peanut Butter Fat Bombs

Okay, so here’s the deal.  Easter is just around the corner and all I see is Reese’s eggs here, there and everywhere.  They are no good to any woman (or man’s) waistline, especially when you are trying to reduce it just in time for the Summer and bikini season!  So if you have a little sweet tooth just like me, this is the perfect recipe to satisfy that growling beast and keep any splurges on eggs at bay.

What better way to enjoy a cup of coffee than with some guilt free chocolate?!

As a Mom, I am constantly looking for ways to treat my kids without having them climb the ceiling on a sugar high and this is perfect.  Full of healthy fat, not packed with high fructose corn syrup and the kids just LOVE them.  WIN WIN in my eyes. Low Carb Tuna Melt Pizza

Low Carb Tuna Melt Pizza

Seriously though who would think tuna on a pizza? I’ll be honest it wouldn’t be my first choice but then I remembered about the times when I used to order a Tuna Melt Panini.  The buffalo gives it that little bit of a kick but you could easily swap it out for another flavor or your own toppings for that matter.  The best part of this is that it really is so simple to make.

Paprika Chicken

Who doesn’t love a good chicken dish??? I know I do.  The problem is it doesn’t give you much fat…so when I found this recipe I just had to try it.

It is extremely versatile too, so if you don’t like paprika, NO PROBLEM.  Simply swap it our for another flavoring.  It would work well with peppercorns or even garlic. Yummmmm!

FYI:  Paprika is a glorious red spice created by grinding sweet red bell peppers and chile peppers into a fine powder. It is available in sweet, hot and smoked varieties to name a few.  Paprika also adds some health benefits to the recipe, such as protecting the eyes from macular degeneration.
